Heart Healthy Zucchini stew with homemade sour cream
Main ingredients: 1 Zucchini, 1 green and or red, yellow sweet pepper (jalapeno if you want a kick) chopped 1/2 onion, 1 garlic, mint, parsley, 3 tomatoes, tomatoe paste of choice or preserved home made tomatoe sauce (I used Ragu roasted herbs), egg white.
